INGREDIENTS: • - 1 cup sushi rice • - 1 1/4 cup boiling water • - 2 tbsp rice vinegar • - 1 tbsp maple syrup • - 1 tsp salt • -rice paper sheets • - Nori seaweed sheets • - Filling of choice (I used cucumber, carrot, avocado and vegan tonkatsu sauce) • - Sesame seeds • - Oil for frying INSTRUCTIONS: • Rinse rice with cold water until the water runs clear. • Transfer into a pot and add boiling water, cover with a lid and cook for about 15 minutes or until rice is cooked. • Meanwhile, prepare fillings of choice, cut seaweed into smaller pieces and fill a large bowl with cold water. • Transfer cooked rice into a bowl and season with rice vinegar, maple syrup and salt.
