🥗 Try out this refreshing Cottage Cheese & Tomato Salad! 🍅
Ingredients:
* 3/4 cup cucumber
* 3/4 cup cherry tomatoes
* 1/4 red onion
* 1 cup cottage cheese
* 1 tablespoon white wine vinegar
* Drizzle of extra virgin olive oil
* Fresh mint and dill
* Salt and pepper
* Crackers of your choice
Instructions:
* 	In a bowl, mix together cherry tomatoes, cucumber, and red onion. Season with salt and pepper and combine.
* 	Spread cottage cheese onto a plate.
* 	Top the cottage cheese with the salad mix.
* 	Sprinkle fresh dill and mint over the salad.
* 	Dress with white wine vinegar and a drizzle of extra virgin olive oil.
* 	Serve with crackers of your choice.
