One of my favorite things at the Melting Pot is their Green Goddess Dressing. It's so good. I love stuffing the mushrooms with it, dipping the veggies in it, eating it off of a spoon. It's embarrassing, but not enough to hide it from you all. The thing about making it at home is that I can do all of that stuff and no one sees me. This goodness is great stuffed into mushrooms, celery, used as a dip for vegetables. It's also very easy to make. So enjoy!

Melting Pot's Green Goddess Dip copycat - Leave out the sour cream. Just use cream cheese and add milk til it's the consistency you want. Then add some chives (less than the recommended amount), onion, parsley and a bit of garlic.

Green Goddess Dressing - Very similar to Joy of Cooking recipe - I used less vinegar and lemon (about 1 1/2 Tab each), and more tarragon - because I didn't have tarragon vinegar - I used white wine vinegar.  It's a keeper!  Very fresh tasting, and you can used other fresh herbs, like basil, instead of the tarragon.  Hubby liked it!
