If you’re super lowcarb, feel free to use squash. And if you aren’t watching carbs too closely, this would be amazing with sweet potatoes, too. You can serve this as an appetizer, as a warm salad of sorts, or even devour it as a main. You do you. . Here is how I made it: . 1.Start by washing and peeling 6-8 medium carrots. Cut them into thirds, then cut those in half. Add to a bowl. . 2.Drizzle about 2 tbsp olive oil over the carrots. Add as much as you want or as little. I love having it in mine. We're going to make a fantastic Greek inspired breakfast for you guys. I love Greek food. So I am so excited for this. Me too. Me too. Alright. I think that's pretty good with our spinach. Alright. And I want to come out with some colors. So I had some bell peppers here. Just sprinkle them right on. Uh didn't it look beautiful? It sure does. And then we'll add some onions. Yum. Yes. Love onions. Can't go wrong. Now that we have our veggies in place, I want to bring in some eggs. We're going to start with probably about six eggs here. Just go ahead and pop them straight on top of our veggies. And just go through there depending on how big your dishes. Just how many you want to do but I'm going to work six. Alright. Now that our last egg is in place. Now I like to add our cheeses. Alright. Feta. Any good Greek food as feta. So we're going to just take this and just crumble our block here. Oh look at that. I love feta cheese. Mm. It's good at almost anything to me. Here we go. Alright. Now that our feta's in there, I like to add a little bit of bacon as well. It's up to you. You don't have to put no bacon in it but everything's better with bacon for me. It was inspired Greek food. It wasn't Greek food. We're just going to pretend this is some lamb. Alright. Alright and last but not least, we're going to add some mozzarella. Alright. Let's just go ahead and sprinkle that right on top. Get a good covering there. Alright and then we're going to just top a little bit of this off with I'm just a little bit of butter. I'm just making little pieces here to pop along the top. Like so. Alright. Now that that's in place. We're going to put it in the oven for 350 for about 10 minutes. Look how awesome this looks. Oh I can't wait to get in and try a piece. Let's do. It's very hot. Give me one second. Here we are guys. Look how delicious that looks. With the eggs, the spinach, everything in it. It looks like a confetti bite. Yeah, it's almost like a little mini quiche. Mm. Still is like a perfect piece really.
