Mini Lemon Raspberry Cheesecakes 🍋 🍋 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 🍋 12 ounces cream cheese, softened 1/2 cup powdered sugar Zest and juice of 1 lemon 1/4 cup heavy cream 12 graham cracker crusts 1 cup fresh raspberries Optional: fresh mint for garnish 🍋 Instructions 🍋 Prepare the crusts: If using store-bought graham cracker crusts, proceed to the next step. If making your own, crush graham crackers into fine crumbs. Combine with melted butter and press into the bottom of mini muffin tins.
