Ingredients: 1 cup chickpeas, cooked 1 sweet potato, diced 1 zucchini, diced 1 red pepper, diced 2 tbsp olive oil 1 tbsp maple syrup 1 tbsp Dijon mustard 2 tbsp tahini Instructions: Roast vegetables and chickpeas with olive oil at 400°F for 25 minutes. Mix maple syrup, Dijon mustard, and tahini for the dressing. Drizzle dressing over the roasted veggies and chickpeas and serve.
