I'm back with my simple Puerto Rican-inspired recipes. This episode is about tembleque (coconut custard) with a twist which has become a favorite at Casa Dining Traveler. I love all things parcha, aka passion fruit, so I decided to add passion fruit puree to my tembleque recipe, and voila, we got parcha tembleque. Valentine's Day is around the corner and I have the perfect no-bake, gluten-free, and vegan dessert for you - strawberry tembleque! Tembleque (Puerto Rican Coconut Custard) is very easy to make and the best part is that you can mold it into anything you like. We used a silicone heart-shaped cupcake mold, but you can use multiple ramekins or even a large size heart-shaped mold. Ingredients: 2/3 Cup Sugar 1 Cup Puréed Strawberries 2 Cans Coconut Milk 1 Tsp Vanilla 1 Tsp Salt 2/3 Cup Cornstarch
