My fave après ski outfits are basically a cute, fashion-y take on easy + warm. For some, this means leggings + faux-fur moon boots. For me, it's almost always jeans & a sweater. The key is to make it a bit exciting, in a nonchalant, not trying-too-hard kind of way.
