We’re at episode 3 of Pickles & Ferments and I’ve gotta say I’m loving this series more than I thought I would. 

These Pickled Beets were my fav by far so far. They’re earthy, smokey, sweet and sharp. Honestly you can pair these with most dishes.

As a lover of this Korean ferment, I’m often returning to kimchi flavours and methods when faced with a vegetable needing a home.  Beetroot stems treated as a separate vegetable, salted to draw out moisture and then sauced up with ginger and garlic, gochugaru, honey and homemade miso.  Can’t get more simple than that.
