Bacon pie has been a once-a-year Canada Day tradition for our family and friends. We have grown from having one pie to a minimum of four to accommodate the growing number of cottagers and hungry bellies. This pie is legendary.
Zucchini, corn, red potatoes, onion, and carrots are tossed in a butter-Dijon mustard mixture and seasoned with thyme for a simple (but delicious!) foil pack that works as the perfect side for the gri (Vegan Casserole Potato)
