Restaurant salsa: Package of ancho chiles, 1 squeezed lime, 1/3 Pilloncillo cone, 1 small Roma tomato, 1/4th white onion, 3 garlic teeth Toast chiles, onion, garlic until aromatic. Boil them together with water and Mexican seasonings until soft. Remove seeds and stem. Save the water. Put in food processor with pilloncillo and lime juice and pulse til smooth. Add water to form smooth consistency. Add black pepper and salt to taste.
