Homemade Vinaigrette: 1 part vinegar to 3 parts oil. Vinegar = red or white wine vinegar, herb infused, balsamic, sherry or cider. Also as part of the vinegar ratio, can use fresh juices from lemons, limes or oranges. Oil = vegetable, salad oil, grapeseed or EVOO. Season with salt and pepper, can also add things like minced garlic, ginger, shallots, herbs and assorted spices.
