Easy Spanish Yellow Rice ~ Heat 2 tsp oil in a medium saucepan on medium-high heat. Add 2 Tbsp shallots & 1 clove minced garlic & cook until they start to brown, around 2-3 minutes. Add 1 1/2 cups rice, 2 1/4 cups chicken broth, 1/2 tsp turmeric, 1 tsp salt, & 1/2 cup frozen peas. Bring to a boil, reduce heat to medium-low, cover, & simmer 20 minutes.
