I don't know about you, but I can't eat any cooked food on this heat. So  right now we have only fruit in our fridge and some veggies. And as my fav dish is eggplant salad with tomatoes, I wanted to make it in less than 5 min and I did 😊 I've cut one eggplant and put it on the grill. It took them 2 min to roast. I've cut them in small pieces and added some salt and garlic powder. In the mean time I've made the roasted bread with olive oil and basil. Then I've cut two cherry tomatoes. And at…

Healthy Mediterranean Pizza!  I wanted to use up the rest of my marinated eggplant from the other night, so this was a quick and easy throw together dinner, ready in minutes. Wholemeal wrap, tomato paste, cherry tomatoes, homemade marinated eggplant, olives, red onion, @alwaysfreshau marinated artichokes, fresh basil leaves and some cherry bocconcini. Delicious! I really need to go to bed earlier tonight. Midnight and then up at 545am is not cutting it anymore. So tired  Have a great night…
