I love it on eggs, avo toast, tacos, cottage cheese, the options are endless 😮‍💨🧅 easy quick pickle brine: 1 cup hot water 1 cup white vinegar (I think it tastes best) 1 tsp kosher salt 2 tbsp sugar (or monkfruit sweetener) leave on counter loosely covered for 1-2 hrs then fridge overnight before enjoying. Good up to 2 weeks in the fridge. Things you can add to the brine: garlic, peppercorn, dill, oregano, lime juice, etc. my favorite things to pickle: red onions, cucumber, cabbage, and jalapeños. For jalapeños, add brine and sliced jalapeños to a pot and boil for 1-2 mins. For things like cucumber and cabbage, cover in 1-2 tbsps of salt, let it sit for 30 mins then rinse thoroughly.
