Fluffy mash with sauted Brussel sprouts and leek, chicken stock, cream and a little bit of mustard. This was just so good - I would honestly eat an entire bowl of this by itself! We had this with sausages and veg and red onion gravy - honestly the sweetness of the gravy took this dinner next level. We are going to be having this a LOT over the next few weeks! Been at least 3 weeks since I did a hash brown video lol Makes 6-8 800g Maris piper potato Veg oil or Beef Fat 2 cloves of garlic Handful fresh rosemary Handful fresh thyme 2-3 tbsp cornflour Salt Pepper 1. Peel and grate the potato, submerge in cold water for 5 mins then strain off 2. Squeeze out as much liquid as possible 3. Cover with oil in a large pan season with salt, pepper, garlic, thyme and rosemary. 4. Cook on a low heat for 20-25 mins without colour 5. Strain off the oil but keep it as we fry in this later 6. Mix the potato with cornflour and shape either with your hands or in moulds. Set in the freezer for 40-45 mins 7. Use the oil from earlier to fry them at 175c until golden and crispy all over #hashbrowns #potato #basic #potat

It has taken me YEARS to figure out getting them this crispy...so I thought I'd share my method 1) I always use Maris Piper potatoes 2) I place them in cold salted water, bring to the boil and simmer until just beginning to get tender. 3) drain the potatoes and give them a really good shake to fluff up all the edges 4) Place them on a cooling rack - using the rack is a @cheftomkerridge tip! - or leave them in the colander If you don't have one - to steam dry.
